3. The Slow Wood Fire:
We strictly forbid the use of gas stoves or electric heaters. The Deg is placed over a natural wood and cow-dung fire. The artisan overseeing the fire is a master of his craft; he knows exactly when to increase the heat and when to dampen it just by listening to the sound of the water boiling inside the thick copper walls.
4. The Bamboo 'Chonga' and 'Bhapka':
As the flowers boil, their soul turns into fragrant steam. This steam travels through a hollow bamboo pipe called a Chonga, which connects the Deg to a long-necked copper receiving vessel called the Bhapka. The Bhapka sits in a pool of cold water, acting as a condenser.
